Ingredients

  • 660g parsnips, peeled and cut into 5cm pieces
  • 2tbsp olive oil
  • Sea salt & black pepper to season

Method

  1. 1Preheat the oven to 200°C / Fan 180°C / Gas 6.
  2. 2Spread parsnips on a large baking tray, being sure to not overcrowd. Drizzle with olive oil and season with salt, pepper. Toss to evenly coat.
  3. 3Roast until golden and easily pierced with a knife, about 40 minutes, turn during cooking.
