Ingredients

  • 1.4 kg potatoes (Red-skinned potatoes or Maris Piper work well)
  • 125ml semi-skimmed milk
  • 50g butter
  • Sea salt & black pepper to season

Method

  1. 1Peel the potatoes and chop into evenly-sized chunks. Bring a large saucepan of water to the boil. Add the potatoes and simmer for 15 - 20 mins or until tender. Transfer to a colander and drain well, then return to the pan and set over a very low heat for 2 mins to dry out.
  2. 2Heat the milk and butter in a small pan (or a jug in the microwave), then pour over the potatoes. Remove from the heat, then mash potatoes using an electric hand whisk or potato masher. Season with pepper and a pinch of salt.
