Simple spiced Red Cabbage

  • 660g red cabbage
  • 25g butter
  • 1 tsp ground cinnamon
  • 3 tbsp soft brown sugar
  • 3 eating apples, peeled, cored and diced
  • 100ml red wine vinegar
  • Sea salt & black pepper to season


  1. 1Cut the cabbage into quarters and remove the white core. Finely shred the cabbage leaves.
  2. 2Place all the ingredients in a large microwaveable bowl and mix thoroughly to ensure the sugar and spices are well distributed throughout the mixture.
  3. 3Cover with microwave clingfilm, pierce a few times with a small knife or fork and cook on high for 10 minutes. Remove from the microwave, peel back the film, stir well, replace the clingfilm and continue cook on high for a further 10 minutes.
  4. 4Season and serve.
