Sophie Jude’s Cauliflower cheese with bacon

Ingredients
- 2 medium cauliflower, chopped in florets
- 8 bacon medallions, chopped into small pieces
- 50g butter
- 50g plain flour
- 1 pint of milk
- 1/2 tsp English mustard
- 150g cheddar cheese, grated
- Salt and black pepper
Method
- 1Preheat oven to 160°C / fan 190°C / Gas 5.
- 2Remove the outer stalks from the cauliflower and chop the cauliflower into florets. Place the florets into a saucepan and cover with boiling water
- 3Simmer for approximately four minutes. Drain well in a colander.
- 4Place the florets in an ovenproof dish. Fry off the bacon in a pan, then sprinkle in the cauliflower.
- 5Method for the cheese sauce
- 6In a small saucepan, melt the butter over a low heat.
- 7Add the flour and mix well with a wooden spoon.
- 8Heat the milk in a pan or microwave and gradually add to the butter and flour. Stir continuously and simmer for 2-3 minutes. Stir in the mustard and add in half of the cheese.
- 9Pour the sauce over the cauliflower and bacon, and sprinkle over the remaining cheese.
- 10Bake in the oven for approximately 35 minutes.
