Ingredients

  • 750g potatoes
  • 500ml vegetable stock (ready-made or make your own by dissolving a stock cube in boiling water)
  • 1 tsp dried herbs
  • Sea salt & black pepper to season
  • 2 tbs milk
  • 25g butter

Method

Wash, peel and chop the potatoes into small chunks

Put the potatoes in the slow cooker, with enough stock to cover. (If the stock is hot you can reduce cooking time by ½ an hour). Add herbs and black pepper.

Cook on high for 4 – 5 hours, until the potatoes are soft.

Carefully drain off excess stock (you can save this to use in another dish) and return potatoes to the slow cooker to dry off for 10 minutes or so.

Heat the milk and butter together in a cup in the microwave for 30 seconds. Meanwhile. mash the potatoes.

Add the milk and butter and mix in well. Season to taste and serve.
