Make a batch of these simple and spooky sweet potato biscuits and get creative with your icing. These scary bites are perfect for a Halloween party.

Ingredients
240g butter
200g light brown sugar
150g caster sugar
2 sweet potato’s to make the purée
½ tsp Cinnamon
½ tsp vanilla extract
480g plain flour
1 tsp baking power
½ tsp salt
Writing icing pack and/or silver pearls.
Method

Pre heat oven to 180°c (350°F).

Prick both sides of the sweet potato and place in an air fryer. Cook at 200°C for 10 minutes each side. (You could use a conventional oven and cook the potatoes for a longer time).

Peel the skin from the potatoes, and blend flesh, in an electric mixer, to make a purée. Set purée aside in a bowl.

In a bowl, beat together the sugars and butter, using an electric hand mixer, until combined.

Add the sweet potato purée, cinnamon and vanilla extract. Beat until combined.

In a separate bowl, use the electric mixer to mix the flour, baking power and salt.

Combine the flour mixture with the wet mixture. Beat with the electric whisk to form a dough.

Grease and line a baking tray, and pre heat oven to 180°C. (350°F).

Tip the dough out onto a floured work surface, and knead lightly. Roll dough to 3 cm thickness. Using cookie cutters, or make your our own stencils, cut out your spooky shapes. Place on baking tray, and bake in oven for 15 minutes approx.

Cool on a wire rack completely. Use writing icing to decorate. Enjoy!
