Delicious and nutritious recipes to help you get the best out of your potatoes whatever the season

Poutine chips and gravy

This poutine dish is a classic Canadian street food and is a new, interesting way to serve potatoes. Traditionally made with cheese curds, which can be bought from specialist cheese shops or ordered online, it works just as well with creamy buffalo mozzarella. Topped with a rich gravy, it’s a delicious take on loaded fries.

Retro potato croquettes

Recreate these school dinner favourites at home and spruce them up by adding cheddar cheese and Serrano ham. Another delicious way to use up leftover mash, too!

Cottage pie with cavolo nero and sweet potato top

A cottage pie is a great British classic, especially in the winter months. In this seasonal version we mix a rich beef sauce made with red wine, thyme and bay leaves, with peas, carrots and the season’s best cavolo nero cabbage. A layer of baked potatoes and sweet potatoes is a lovely alternative to mashed potato. Top tip: if you’re making this dish over Christmas, swap your circle cookie cutter for stars.

Super simple breakfast hash browns

These breakfast hash browns can be prepared in advance. To reheat from frozen, place in a pre-heated oven at 180°C for 15-20 minutes. Quick and easy to make, and requiring only three ingredients, they’re ideal for a lazy weekend brunch.

Potato, pea and chickpea vegan samosas

These vegan samosas are ideal finger food for a party snack, or as a side dish to go with a homemade curry. Baking them in the oven is a much healthier alternative to the fried ones you find in restaurants and take-aways. Once you’ve cracked the folding of the filo, you can experiment with different fillings.
