Experiment with different herbs to give these Parmesan and garlic potatoes a little something extra. Ingredients 1kg New/Baby potatoes, halved 2 tbsp light olive oil 3 cloves garlic, finely chopped 1 tbsp fresh rosemary leaves, chopped 50g Parmesan cheese, finely grated 30g butter Sea salt and freshly ground black pepper Method 1Preheat the oven to 200°C / Fan 180°C / Gas 6. 2Arrange the potatoes evenly in the centre of a large sheet of foil. Drizzle with the oil and dot with the butter. Sprinkle with garlic, rosemary, sea salt and black pepper. 3Bring up the sides of the foil, double fold the top and ends to seal, making one large foil packet with room for heat circulation inside. 4Bake for 45 minutes, then uncover and sprinkle with the Parmesan and cook uncovered for a further 5 minutes. 5Tip: Instead of fresh rosemary leaves you can use dried rosemary or thyme.
