Ingredients

  • 540g broccoli
  • 30g butter
  • 2 tbsp pine nuts
  • Zest and juice of half a lemon
  • Sea salt & black pepper to season

Method

  1. 1Bring a pan of water to the boil
  2. 2Cut the broccoli into even sized florets.
  3. 3Add the florets to the boiling water and cook for 6-8 minutes. Drain the water.
  4. 4Heat the butter in a large frying pan, when melted add the cooked broccoli, pine nuts and the zest of the lemon. On a medium heat cook for 5 minutes, stirring frequently. Add the lemon juice and cook for one more minute before seasoning and serving.
